Steaks in Red Wine & Mushroom Sauce
Ingredients
25g(1 oz) butter
2 x 175(6oz) sirloin steaks, trimmed of excess fat
50g(2 oz) mushrooms, sliced
5ml(1tsp) made wholegrain mustard
75ml(3fl oz) red wine
50ml(2fl oz) beef stock
Instructions
1. Melt the butter in a frying pan and add the 2 steaks
2. Fry for 1 minute on each side
3. Lower the heat on the pan. Cook for a further 3-4 minutes for rare, 4-5 minutes for medium and 7-8 minutes for well-done steak (turn constantly to ensure even cooking before placing on plate)
4. Add mushrooms & cook for 2 minutes
5. Blend mustard with wine and stock
6. Add to pan and boil for 2 minutes to reduce liquid levels.
7. Serve the steaks with the sauce.
