Wine Marinade Recipe

For large legs and shoulders of lamb and game. Preparation: 10 minutes plus 8-12 hours marinading.

Ingredients

90ml (6 tbsp) dry red wine
45ml (3 tbsp) wine vinegar
45ml (3 tbsp) oil
1 sprig each fresh parsley and thyme
2 small bay leaves, crumbled
1 garlic clove, crushed
1 small onion, sliced
1.25 ml (1/4 tsp) ground nutmeg
15ml (1 tbsp) caster sugar
Shake of cayenne pepper

Instructions

1. Combine ingredients well together
2. Pour over meat
3. Cover and refrigerate 8-12 hours, turning at least twice.
