Ice Wines

Ice wines get their name from the fact that the grapes that make them have been frozen while still on the vine, before being prepared for processing and fermentation.
Other grapes are picked, then processed, and eventually pressed to create the wine. During that whole process they are able to start breaking down, as pulling them from the vine has initiated the dying process of the fruit.
With ice wine grapes, the freezing has stopped that process before it could start, making for a sweeter result when the grapes are used to make a wine.
Because of the fact the grapes have been frozen, they remain sweet longer, while waiting to be used in wine making. The sweet nature of these grapes usually makes them take on a future life as dessert wines.
